Switch to `gitbook` format

Please, refer to BUILD.md for instructions on how to work with this format. I know, it may look insane ... let's try it an see :-)

I didn't add or remove any content, just refactored a lot and added a lot of placeholders and TODOs. If I dropped something unintentionally, please, let me know.
