Restore symfony 5 support

Minor typo. Frist replaced everything in my project and then saw the typo :|

They are outside of the module so can be called when the module is
disabled, which gives an error somewhere deep in the call stack.
Check for all endpoints whether saml2-idp is enabled in config
and whether the module is enabled before doing anything else.

.coveralls.yml has been superceded by codecov.yml. Update the release
build script to delete the new file.

The composer.lock file that was committed to the repository did not
match composer.json. It was built from a composer.json with an extra
section to override the PHP version check:

    "config": {
        "platform": {
            "php": "7.1.33"
        }
    }

Rebuild composer.lock without that config section, to prevent warnings
from Composer due to the mismatch.
